Ingredients

 ½ cup walnuts (chopped)
 ½ cup organic apple (cored and cubed, skin on)
 2 tbsp organic apple cider vinegar
 1 tbsp fresh sage (see Chef’s Notes)
 2 tbsp onion (chopped)
 2 tsp maple syrup (or date paste, link in Chef’s Notes)
 1 tsp dijon mustard
 ½ cup water
 ¼ tsp salt (optional)
  tsp ground black pepper (optional)

Directions

Add all ingredients, starting with only 1 tablespoon of sage, to a blender and blend until creamy.

Taste for seasoning: if you’d like more sage flavor, add an additional ¼ to ½ tablespoon of sage.

Add 1–2 tablespoons of water as needed to reach the desired consistency.

Chef's Notes

Substitutions
Use pecans or cashews in place of walnuts.

For the apple, use any sweet red apple.

Use shallots in place of onion.

Use brown mustard in place of Dijon mustard.

Substitute one teaspoon of dried sage for one tablespoon of fresh sage.

Nut-free
Substitute raw sunflower seeds in place of walnuts.

Substitute unsweetened and unflavored yogurt in place of walnuts.

Whole-food Sweetener
Use date paste in place of maple syrup.
