Lemon Zaataar Crispy Chickpeas

Ingredients

 1 ½ cups chickpeas (home cooked or BPA-free canned, drained)
 2 tsp za’atar seasoning (see Chef’s Notes)
 1 tbsp lemon juice (freshly squeezed)
 1 tsp organic lemon zest
 ¼ tsp salt (optional)

Directions

Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

Drain the chickpeas if using canned.

Spread the chickpeas on the baking sheet. Bake for 30 minutes, tossing halfway through.

Meanwhile mix together the za’atar seasoning, lemon juice, and lemon zest in a medium-sized bowl to form a paste. After 30 minutes of roasting, add the chickpeas to the bowl and toss with the spices until the chickpeas are evenly coated.

Spread the chickpeas on the baking sheet again. Sprinkle with salt, if using. Bake for an additional 5 minutes (or until crispy).

Chef's Notes

Substitutions
Use lime or orange in place of lemon juice and zest.

Add chipotle chili, cayenne, or red pepper flakes to the spice mixture.

Bake at 390 degrees F for 12–15 minutes, shaking the basket twice in between.
